Spinach Artichoke Dip

In honor of St. Patrick’s Day I am sharing my favorite green recipe with you…and with my co-workers at our St. Patty’s Day Bash!  This is one of my go to dips for parties.  I have had so many requests for the recipe that I keep a saved copy in my email to send out.

The best part is that it is quick and easy to make and includes ingredients that I usually have on hand, or that have a long shelf life. I have tried this dip as an appetizer at several restaurants and I have to say this recipe rivals each one!

Do you have a favorite green recipe or a St. Patrick’s Day snack that you look forward to every year?

Spinach Artichoke Dip

2 packages cream cheese
1/2 cup mayo
2 tbls lemon juice
10 grams chopped spinach thawed and drained
3 cloves garlic minced
1 can artichoke hearts drained and chopped
1 cup grated parmesan cheese

Mix cream cheese and mayo until smooth.  Mix all other ingredients bake at 375 degrees for 20 minutes covered and then 5 more minutes to brown.

I love this dip so much more than my spinach artichoke dip recipe, the difference being the cream cheese. Thanks for bringing it in today. I’m going to miss our work parties. I doubt no one else knows how to throw a work party like us, fondue? The hot dog roller? good times, ladies!

We will have to take our office party culture with us to share with our new peeps and hope that it continues here!
