I eat bananas and I make smoothies when the bananas are too ripe for me, but I was in search of something else that was packable for early mornings at the gym.
Now, I have Banana Oat Bites or cups or muffins but no real recipe, just toss it all in the mixer to blend and scoop into muffin tins to bake.
I use one banana per 1 cup of oats, but usually have 2-3 bananas to use
A little agave nectar (pick your sugar)
A splash of milk (if using granulated sugar you might use more)
A punch of baking powder
1 egg
Walnuts
A tbsp or two of chocolate chips
Coconut flakes work for a little something sweet, too
Bake at 350 for 20 in a sprayed muffin tin. Cupcake wrappers seem to make more of mess with the paper sticking, not eating paper has affected me!
I store mine in a container in the fridge.
