Inside Out Carrot Cupcakes

What quells your sweet tooth and makes a great addition to a packed lunch?

According to the Eat This Not That guy, a muffin is really just a little cake so it wouldn’t matter if I made muffins or cupcakes for my latest sweet tooyh craving. I opted for cupcakes and then took it a step further and put cream cheese inside. Oops!

You can use a box mix or I like Martha Stewart’s recipe for mini cupcakes (not that mine were mini).

For the cream cheese filling you’ll mix 6oz cream cheese with 2 tablespoons of sugar.

Place liners in your muffin tins and fill half way with batter, drop a teaspoon of the cream cheese and top off with more carrot cake batter making sure the whole thing doesn’t fill more than 3/4 of the pan.

Now that I’ve made carrot, I’ll probably make Pumpkin like these from Annie Eats because it is a nice little surprise in my lunch (yes, even though I’m the one packing it).
