My fondest memory of egg salad is from traveling as a kid. I don’t know why, but Stuckey’s travel centers had the best egg salad sandwiches. Not too dry or wet, the consistency was just right and the ingredients were chopped to perfection. I have not yet mastered the perfect Stuckey’s egg salad, but I do think the one I make is pretty tasty. I like to eat my egg salad one of two ways: on white bread or in a wheat tortilla wrap, the first option is my favorite, but to cut the calories I will wrap it up for lunch.
The Lin’s Egg Salad
4 boiled eggs (diced)
1 stalk celery diced
1/3 c. Miracle Whip-to desired consistency
1 squirt of mustard
2-3 t. relish
salt to taste
Mix all ingredients together.

1 egg
a squeeze of mustard (usually something on the stoneground side)
a half-teaspoon or so of horseradish
a couple of grinds of black pepper
enough Miracle Whip to hold it all together
So. Much. Yum.
