Burrito Bar

Hooray, it is the last day of March Madness of Lunch Packing! I hope you enjoyed it, added some new recipes to your rotation or at least had a little fun reading!

As for my post today…it is admission of my love for the fast food burrito. I cannot explain it, but it I love them so much I’m on the hunt for the perfect copycat recipe. I haven’t found it, but in the meantime, I’ve tried some recipes that have created flavorful meals.

I’m not sure I’m in the market to host a burrito party, but if I was I would follow this recipe, which is dubbed better than Chip-pots. Since it is just me, I use my crockpot mini and make it with no more than one pound of chicken so I adjusted her recipe and till had chicken to freeze. I found that making beans and rice for four burritos bowls is enough to keep me from going over the edge.

    We usually get burritos from Moe’s Southwest Grill on Mondays when it’s Moe Monday and they are $5 each. I have made my own version of their rice bowls before.

    Once we moved to Chicagoland, I had to come up with recipes to fill the void from our favorite places in Detroit. Perfecting a Mexican Rice to fill the void of Zumba’s rice (a Mexican place in Royal Oak, MI), and of course lots of Middle Eastern foods…hummus, stuffed grape leaves, baba ganoush, etc…I finally after 4 years made a mujadara (lentil and rice dish) that compares to New Yasmeen Bakery in Dearborn, MI. I made others in the past that were fairly decent but not fabulous. It’s still not a perfect match but it gets us through until we go back to visit or my parents bring it out 🙂

      Not sure if our Moe’s have Moe Monday, have to check with Saving Lifestyle, but then again I’m not looking for another reason to dine out…ha!

      I guess it has been a few years since you’ve moved from MI. Working on copycat recipes has helped me work on my use of spices, it seems to be all in the flavoring!

        It’s been over 4 years now since we moved from MI, can you believe it? Doesn’t seem like that long! Have you ever checked out Penzeys? http://www.penzeys.com/ I love, love, love their spices. They have the best fajita seasoning ever and I usually season my beans for burritos with it. Using good quality spices really makes such a difference.

    I love copycat recipes and look for them on a regular basis. My favorite is probably my Cracker Barrel Buscuit recipe http://www.cdkitchen.com/recipes/recs/330/Cracker_Barrel_Biscuits48939.shtml They are light, fluffy, and wonderful!
