This is what I like to call a reversible jacket meal.  For supper the night before its tostados and the next day for lunch I turn it around and make it a taco salad.  I take a little of the meat mixture, the fixings I like, and replace the tostado with tortilla chips(Fritos corn chips are even a little bit better).  Break up the chips, mix all the ingredients up and it makes a tasty taco salad.  It’s more portable this way and I still get the same effect.

Recipe:

Tostado

1 lb. of hamburger

1 jar of mild salsa

½-1  can of refried beans (warmed)

4 tortillas (flour or wheat)

½ c. to 1c. cooking oil (enough to cover bottom of skillet)

Fixings:

Diced tomatoes

Diced onion

Shredded Lettuce

Shredded cheese

Sour cream

Cook and crumble the hamburger.  Drain hamburger.  Replace hamburger back into skillet and add a jar of mild salsa to hamburger, stir together.  Leave on stove to warm while frying tortillas.  In another skillet cover the bottom with cooking oil.  When cooking oil is hot place 1 tortilla at a time in the skillet(you may want to flip the tortilla to get it fried on both sides) and fry the tortilla until crispy.  Lay on paper towel to drain.

Tostado, Refried Beans, Hamburger Mixture, Lettuce, Tomato, Cheese
