My 20 year reunion is here and I’ve sucked it up (and I maybe sucking it in) and I’ve decided to go. Yes, I have gained a pound or 2 since my graduation and I’m not as svelte as I once was, but my goal is to get back to semi-svelteness. I want to lose between 10-15 pounds, 15 may be pushing it, but I’m going to push it. One of the ways I’m going to make this happen is lunch packing everyday. As I admitted last week I had fallen off the wagon, but I am back on and going strong. I’m going to focus on wraps filled with salads; tuna, egg, and chicken. I also wondered if I could do a few pasta salads now and then. I normally don’t worry whether my lunches are light, but if I want to reach my goal it matters now. Jillian and I will also be becoming best friends during the next 2 months as I work to reach my goal. I’m going to bust out my LunchiPunchit cards and get packing.
Chicken Salad
1 can chicken
Mayo to taste
Stalk diced celery
1 can crushed pineapple-drained
pepper to taste
Mix all ingredients together for salad.
