Summer Tuna Salad

 

During the summer I get a taste for a different kind of tuna salad other than the one you eat on  a sandwich.  My mom would fix this a lot for us when we were growing up because it was quick, cool and light.  There isn’t much to it but it all seems to work.  I usually just eat it out of a bowl, but putting it on crackers or in a wrap would be good too.  I took this for my lunch a couple of weeks ago, but there is a hitch…it works better if you assemble all the pieces when at your lunch because the lettuce will be nice and crisp.

1 Diced Tomato

1-1/2 cup cut up lettuce

1 can of tuna in water

Miracle Whip to taste

Mix all ingredients and eat!

    I do mine with just tuna, Miracle Whip and roughly chopped cashews. There’s just something about Miracle Whip.

      I like the cashews to add a little more crunch. Miracle Whip adds just the right zing. Any other mayo just wouldn’t give it the right taste.
