Crispy Chocolate Marshmallow Treats
6 tbsp butter
10 oz mini marshmallows
1/4 c unsweetened cocoa (it says dutch-process but I used what I had)
6 cups crisp rice cereal
2 oz bittersweet chocolate, melted (in a double boiler)
Martha does the whole parchment paper in the pan, I don’t. I spray with cooking oil spray and call it good enough.
In a saucepan melt butter, marshmallows and cocoa, stirring frequently until melted about 6 minutes.
Stir in rice cereal.
Press mixture into butter or sprayed 8-inch pan.
Drizzle with melted chocolate.
Let cool; store at room temperature
In the photo above, I did not do the melted chocolate drizzle because I was cleaning out the cupboard in preparation for Chinese New Year and using what I had on hand.

February 3, 2012 at 10:19 pmMy Mom used to make these when I was a kid. She always used to use cornflakes instead though and she used to add a handful of raisins too! They were so yummy!
