I have this really cool altered book that is my recipe book and as I’ve asked or collected recipes, I collage them into this book. My mom found a recipe for chicken salad called Dot’s Chicken Salad, I have no clue who Dot is but she makes a chicken salad that is right up my alley!
1/2 cup sour cream
1/2 cup mayo
3/4 tsp salt
1 tbsp lemon juice
1/4 cup pecan halves (sometimes I use chopped peanuts)
4 slices bacon, cooked and crumbled
4 cups cooked, shredded chicken OR 1 can of chicken
Beat sour cream with mayo, salt and lemon juice.
Toss chicken into dressing until moist.
Chill.
Just before serving stir in nuts and bacon.
My mom’s recipe note says: Best on bagels!
Andi’s note: go ahead and mix everything, divide into Pyrex dishes so you have a week of lunches almost ready. Then, add bagel or bread (we have a toaster at work) and leaf lettuce.
Yes, I’m eating off a paper towel because I forgot a plate at work. But I had a reusable cloth napkin in my lap or nearby when took this photo.
