Recipe: Bacon Cheeseburger Chicken

When I made my bacon-egg-cheese biscuit sandwich I made extra bacon so I could try making this Bacon Cheeseburger Chicken recipe.

Like many recipes, I had to take a slightly different route because I lacked a few ingredients (Teriyaki sauce and ranch dressing) but because I never tasted the original recipe, I would not be able to tell a difference!

You can get the recipe with step-by-step photos through the link above, but the following is the recipe in a nutshell:

Fry cut bacon (or bacon strips and then cut into bits – your choice!)
Sear boneless chicken breasts in a little bacon grease*, about 4-5 minutes
Pour a light layer of sauce (teriyaki sauce, BBQ, creamy salad dressing – to keep the chicken from sticking to the pan)
Place chicken in a baking dish
Pour more sauce on top of chicken
Top with shredded cheddar cheese and bacon bits
Bake at 350 degrees for 25 to 35 minutes

Easy enough!

*You are wondering how I had this if I made egg sandwiches? After frying bacon, I pour the grease into a glass jar (never down the drain) so after I made my breakfast sandwich and was ready to make this the grease was still liquid and I poured a smidgen back into the pan for a little cookin’ flavor (I know you’re thinking, geez louise, why not hook up an IV, but my g’rents dined this way and lived into their 80s! and in the words of Mame Dennis LIVE! LIVE! LIVE!).

    Yum :-0 We used to make something similar to this in a restaurant that I worked at and it was a huge hit!

    We always save the bacon drippings. There are great for so many things. I put a little scoop in with veggies too.
