Peanut Butter & Jelly Sushi

My five-year-old nephew and I were enjoying peanut butter and jelly sandwiches while taking a break from swimming and I told him sometimes at work I get so excited to eat my sandwich, I take a few bites before lunch. He giggled. What I didn’t tell him is that this is usually because I’ve gotten up early that day to workout so I’m ready to eat lunch at 10:30am. But I don’t really want to take my lunch break at 10:30am, so I grab a bite, a slice of my apple and head back to my desk.

Making a peanut butter and jelly sandwich like sushi makes it even easier to pop a few bites. I know school kids have limited lunch breaks so they do better with finger foods and the smaller the bites, the easier it is for them to grab and eat. I make mine four rolls out of one piece of bread, but you’ll see I really love peanut butter*.


Roll out the bread with a glass so the bread is flattened and easier to roll up once it is filled.


Put down the strip of peanut butter (see? I’m heavy on the PB!) followed by jelly.


Roll it up. I seal my edge with a smear of peanut butter. Then, slice it making sure you’re not hasty and letting the good stuff ooze out.

*No one in my office has a peanut allergy, but I realize this is a concern in classrooms and workplaces.

    Rob would love this. I actually don’t eat peanut butter and jelly. Even as a kid I wouldn’t eat it. Just me being picky…still. LOL
