This past weekend, I attended a food truck festival and enjoyed my third favorite sandwich: grilled cheese! It was bacon and cheddar on tuscan pane from C’est Cheese Food Truck.
For me, grilled cheese sandwiches aren’t just something to be enjoyed from a food truck or on a rainy day at home. I make them ahead of time and pack them in my lunch. I only reheat them about 10-15 seconds in the work microwave and so the cheese softens but the bread doesn’t get too soggy.
I’ve also made brie, raspberry and bacon grilled cheese sandwiches.
Remember: your packed lunch doesn’t have to be boring, unless you’re boring and can’t help it 😉
