So Much Produce

Who participates in a CSA? You’re my hero, if you will share links to your favorite summer recipes!

This is some of what I picked up for a friend and I was completely overwhelmed by the offerings.

I used the corn to make summer chowder. I sauteed some squash and tomatoes. I made bruschetta with the other tomatoes. I made apple crisp.

I stared at much of it and then took a bag to work and let my coworkers have the rest. I didn’t have the time this week to scour Pinterest for recipes, but maybe next time I’ll be better prepared.

    How strange… this is the amount of produce that my small family of 3 consumes in 2 days and some more if you count all the fruit too!
    I usually cook meat with vegetables either in the oven or in a casserole so we go through an insane amount of zucchinis, eggplants or anything in season

      3 people 2 days would be 6 for a singleton, so that’s about right in addition to my weekly produce purchasing routine. An unexpected windfall from a CSA would mean more produce for one.
