Starting yesterday with Lin’s Little Chicken Pot Pies we have dubbed this week frozen food week and are sharing recipes you can make and freeze. No excuses that you cannot pack, when you have tasty meals waiting for you in your freezer – just pack & go!
Mid-month, we have another theme week planned but you’ll have to come back and see what we’re cooking up. One more hint of what’s to come, March 23 is chip and dip day and to us, that’s always a day to be celebrated, maybe more than once.
So keep your eyes on Lunch It Punch It, because the winners aren’t all going to be on the court this year!

March 1, 2011 at 9:33 pmYesterday for me was tunafish in miracle whip with chopped cashews, eaten with saltines; vanilla yogurt; & cara cara orange sections.
Today was pork & stuffing (from the local butcher shop – I live near an actual butcher shop!), twice-baked potato (also from the butcher’s), vanilla yogurt, & cara cara orange sections.
Tomorrow is likely either PB&J or Campbell’s chicken noodle soup (I keep several cans at my desk for when I forget to shop or sit and my desk and hate what I brought for lunch, or actually honestly just want soup).

March 1, 2011 at 10:09 pmI haven’t ever added cashews to my tuna, but I think it sounds delicious. I also love that you have back up lunches at the ready just in case you forget your lunch. I need to take a few cans of soup to have around myself for the days that I leave my lunch on the kitchen counter at home!
