To gear up for frozen food day, Sunday March 6, Lunch it Punch it is going to be sharing frozen foods that are fast and ready to pull out of the freezer even on your busiest mornings.
I enjoy a good chicken pot pie! The frozen single serving pot pies from the freezer section know how to hit the spot, but I wanted to see if I could make my own. I decided I would go for it. This is what I came up with:
Chicken Pot Pie Bundles
1 lb. cooked cubed/shredded chicken
12 oz. bag mixed frozen vegetables
2 cans 10 oz. cream of chicken soup
1/2 c. milk
salt and pepper to taste
3 seamless crescent roll packages
In a bowl mix together cream of chicken soup, mixed vegetables, milk, salt/pepper and chicken. Cut each seamless crescent dough into 3 even strips. Place bottom half of dough strip into large muffin tin. Fill with chicken mixutre. Fold top part of dough strip over filling and pinch to seal. Do same for rest of pot pies. Bake until dough is golden brown.
Let them cool in fridge, bag, and freeze them.

I think these could use about any type of filling you’d like. You can try using pizza dough or pie crust dough. When I make these again I might try using the pie dough.
