Frozen Food: Calzones

We are big pizza eaters around my house and since calzones fall into roughly the same category they are always a hit.  I just put together a few extra when I’m having them for supper to freeze for future lunches.

Pizza Dough Recipe:

1/4 ounce (7 gram) package of active dry yeast
1 cup warm water
2 teaspoons sugar
1 teaspoon salt
3 Tablespoon melted butter
2 1/2 to 3 cups flour
Olive Oil

Directions:
1. Preheat oven to 400 degrees.
2. Dissolve yeast into warm water and stir.  While stiring add sugar, salt, and butter.  Then begin adding the flour by half cup fulls at a time.  Begin kneading by hand when necessary.
3. When all the flour has been added, transfer your dough to a lightly floured surface and begin kneading until dough has a uniform and consistant appearance and feel.  This will take about five minutes.
4. Divide your dough into five balls and let rest for ten minutes. 
5. Roll out your dough and add toppings…filling…you know the good stuff…on to half of the calzone.
6. Fold dough in half to cover toppings and press edges closed with a fork.
7. Bake until golden brown.

Makes 5 calzones.  Freeze extra calzones and save for a future lunch!

From stiring water and yeast to eating takes about an hour, but this recipe could be made even faster and easier by using bought pizza dough.  I love to mix up some garlic and butter to dip mine in, which can easily be packed in a small container like a pinento jar and heated up in the microwave!

    I make vegan versions with seitan “pepperoni” and soy cheeze. I agree, they are great for lunches and they do freeze well. I usually poke holes in the top of mine with a fork before baking and sometimes I get creative…I’ve poked out message such a “I Rule” just to be silly or “Love U” for my hubby. Take that Conversation Hearts…Conversation Calzones are so much better 🙂
