Recipe: Baked Spaghetti

This recipe appears on my blog, udandi, but I am re-posting it here and dedicating it to singletons and couples who think cooking for 1-2 is too much hassle.

I invited Lunch It Punch It fans Ashley and Joe to eat with me so they could see firsthand this recipe is easy, tasty and most importantly something they can make (and freeze if needed).

PAN:
8×8 square (or I prefer the 11×7 brownie pan)

INGREDIENTS:
8oz spaghetti
½ lb ground beef or Italian sausage (casing removed), crumbled
14 oz (1 ¾ cup) spaghetti sauce
1 egg lightly beaten
1 ½ cup shredded mozzarella cheese, divided
¼ cup grated Parmesan cheese

INSTRUCTIONS:
Preheat oven to 375*
Spray a 8-inch square pan (or 7×11 brownie pan) with cooking spray, set aside
Cook spaghetti as directed on package
Brown meat on medium heat; drain
Stir in sauce
Reduce heat to low; simmer 5 minutes stirring occasionally

Drain spaghetti and place in large bowl
Add beaten egg, 1 cup of mozzarella cheese and Parmesan cheese; toss to coat
Place in prepared baking dish
Top with meat mixture
Sprinkle with remaining mozzarella cheese

Bake 15 minutes or until heated through
Let stand 5 minutes before cutting to serve

At this point, I cut it into six portions, put each portion into Pryex 2-cup rounds with the lids and store in the fridge or freezer. That my singleton and couple friends, is how you make a homemade meal into a pre-packaged lunch that’s worth a punch!

    Look at us chowing down! It was very tasty, I would definitely eat it again. And it’s easy enough that I just might try and make it myself!

    Yummy!! Baked pasta is a family favorite. Though I usually add ricotta to the mix before baking.
