My mom would (and still does if you are there at the right time) make us fast-food style bacon-egg-cheese biscuits and I am not going to lie, I love them! Maybe I love the nostalgia of cooking the way my mom does and enjoying it while reading the paper in my PJs or maybe I just love bacon*! A little of both.
I do one egg, one biscuit and a little more than a splash milk (or half n half) per person so upscale as necessary.
While baking a biscuit in my toaster oven, in a small frying pan, I cook the cut bacon, then drain the grease. I pour the egg-milk mixture over the bacon. When it is almost done, I sprinkle on some shredded cheese. I flip it over in half like an omelet (if using one egg you will want a small pan so it does not spread much). Then, put it on a biscuit that has been cut open like a sandwich bun and enjoy!
Since I was frying up bacon, I did a little extra to freeze for a baked potato later in the week and a little more so I could try Amanda’s Bacon Cheeseburger Chicken, which is going to be my dinner.

*My maternal grandmother put bacon in her pancakes and I remember thinking that was taking it a little far. Every time I make bacon, I think of her.

Tell me more about this biscuit in a toaster oven. Please! I have a toaster oven sitting unused, and this sounds right up my biscuit-loving alley.
Tracey, two (or more) biscuits side-by-side, same temp, but I do it a few minutes less. Like it might say 20 minutes and I do about 17 and check to make sure it is not getting crispy. I like fluffy, light, not hard biscuits.
