Recipe Round Up: Pineapple Cranberry Relish

Since next Thursday is Thanksgiving, I am posting a recipe a week early and one that my mom contributed in honor of the holiday. I gave her my old digital camera so she can start taking photos of her food and emailing them to me :) She staged this one with some holiday props!

1 large orange — peeled
12 oz fresh cranberries — rinsed and drained
1 cup sugar
20 oz crushed pineapple — drained

Directions
Process cranberries until coarsely ground.
Cut orange into chunks and add to food processor.
Pour fruit into large bowl and add sugar and pineapple.
Cover bowl and allow to sit out overnight at room temperature.
Chill. Stir relish before serving.
Serves 8

aaahhh, this is so circa 1975 for me. What would Thanksgiving be without this? I love it. Thanks for contributing, Mom :)

Seriously Robin, my dad would ask what’s Thanksgiving without it! Next time we’ll have to put it in the vintage Pyrex for extra throwback points ;)
